Ingredients
  

  • 1 Cup  semolina (rava/sooji)
  • Cup water 
  • 1 Small onion, finely chopped
  • ½  Cup mixed vegetables (carrot, beans, peas, capsicum)
  • 1 green chili, slit or chopped
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal (split Bengal gram)
  • 8-10 curry leaves
  • ½  inch ginger, grated
  • 2 tbsp oil / ghee
  • ½  tsp turmeric powder
  • 1 tbsp  lemon juice (optional)
  • Salt to taste
  • Fresh coriander leaves
  • 2 tbsp grated coconut (optional, for garnish)

Instructions
 

  • Dry Roast the Rava
    First Heat a pan on medium flame and add the semolina (rava). Dry roast for 4-5 minutes, stirring continuously, until it turns aromatic and light golden.
  •  Prepare the Tempering (Tadka)
    In the same pan, heat oil or ghee.Aand dd mustard seeds and let them splutter.Add urad dal and chana dal, sauté until golden,Add chopped onions, green chili, ginger, and curry leaves. Sauté until onions turn translucent.mixed vegetables and cook for 3-4 minutes on medium heat.
  • Cook the Upma
    Pour 2½ cups of water into the pan.Add salt and turmeric powder, mix well, and bring to a boil. Reduce heat and slowly add the roasted rava, stirring continuously to avoid lumps. Cover and cook on low flame for 4-5 minutes until the water is absorbed.Turn off the heat, drizzle lemon juice, and mix well.
  • Garnish & Serve
    Now Garnish with  a fresh coriander leaves and grated coconut (optional). Serve hot with coconut chutney, pickle, or yogurt.

Notes

Use Fresh Vegetables – Carrots, beans, peas, and capsicum add crunch and nutrition.
Adjust Water Consistency – For softer upma, add more water; for a drier texture, reduce slightly.
Enhance Flavor – A dash of ghee at the end enhances the taste.
Make it Spicy – Add a pinch of red chili powder for extra heat.
Best Served Fresh – Upma tastes best when hot; avoid reheating too much.
